a. In a large frying pan over medium heat, add olive oil, spinach, and garlic.

b. Cook for 2–3 minutes, stirring occasionally, until spinach is fully wilted.

c. Transfer to a sieve and allow to cool. Squeeze out as much liquid as possible.

Bake at 375ºF for 20–25 minutes, or until the pastry is puffed and golden brown.
