How to Make Apple Rose Tarts

Dough to use:

Either 10″ x 15″ Sheets or 15 lb. Ready-to-Sheet Bulk.

Ingredients:

1 sheet Pennant Puff Pastry (10” x 15”)
2-3 apples, thinly sliced
1 tsp. ground cinnamon
1 tbsp. powdered sugar (for dusting)
1 tbsp. flour (for rolling)
Egg Wash (1 egg + 1-2 tbsp. water)

1. Dough Preparation:

Thaw desired number of sheets or prepare bulk dough according to directions. Roll out onto a lightly floured surface.

2. Makeup:

a. Thinly slice the apples and set them aside in a small bowl.

b. If desired, soak the apple slices in a little water or lemon juice to prevent browning.

c. Lightly dust the rolled-out pastry with flour and brush the top with a thin layer of egg wash.

3. Panning:

a. In a small bowl, combine the cinnamon and powdered sugar. Sift a light layer over the top of the pastry.

b. Begin at one edge of the pastry, and layer the apple slices, slightly overlapping each other, to create a “rose” shape.

c. Gently roll the pastry with the apples inside, ensuring it is tight but not overly compressed.

d. Place the rolled pastry into a muffin tin to help it hold its shape while baking.

4. Baking:

Bake in a preheated oven at 375ºF for 12-15 minutes or until the pastry is golden and puffed.

5. Finishing:

Sift a light dusting of powdered sugar over the top before serving.
