Ingredients:

  • 1 – 15” x 23” Pennant Frozen Puff Pastry sheet*
  • ¼ cup olive tapenade
  • 1½ cups low moisture mozzarella cheese, grated
  • All-purpose flour, for dusting
  • 1 lg egg, lightly beaten

Filling

  • 1 cup mascarpone cheese
  • 3 cloves of minced garlic
  • ⅓ cup frozen chopped spinach, thawed, squeezed dry
  • ½ cup artichoke hearts, drained form oil, finely chopped
  • ½ cup crumbled sheep milk feta
  • ½ cup chopped roasted red peppers, drained, patted dry
  • ½ cup sundried tomatoes, drained from oil, finely chopped
  • ¼ cup. finely chopped fresh dill
  • 3 Tbsp. finely grated lemon zest
  • 1 tsp. kosher salt
  • 2 tsp. freshly ground black pepper
